    I found that diff cheese do better frozen than others.  I have a fridge just for my smoking hobby.  I don't freeze anymore cheese, I did have problems with crumbling on certain cheese.

    I smoked cheese several times,  I use a smokin tex 1400.   I cold smoke for 1 1/2 hrs. for sharp cheddar, swiss, pepper jack, mont. jack and mozz.  Vac. pack cheese and let sealed and in the fridge for at least 2 week, longer the better, but it hard to hold off. Even my wife loves the cheese...

    Great looking cheese, just open my last batch after 2 weeks, my buddies and wife love them.  just using a few bags now, letting the rest of them age a few more weeks.  that's if I can stay away, that's always the hardest part. Good Luck

    my first batch of smoked beef jerky. Taste burnt ? Help?

    yes to much smoke time, need only 1/2 hour, then heat only to dry out.  160 degrees, need to keep eye on it, each unit is different.  your not doing large chunks of meat

    No, i have never had any problem with liquid.  i use LEM mix can order online or at bass pro,  mix packet and  1oz. water per pound of meat.  i use a packet that will make 10lbs.  leave it sit over night to draw into the meat, then go ahead and shoot it.  if you need any help send me a PM.

    to start out here is some of my equipment I use when making jerky.  I purchased 30lbs. of very lean ground beef.  then mix 10lbs.  with a packet of LEM spices, they work the best of of all the mixes I have tried.  Roll meat into small logs to insert into the jerky cannon, check out video's at...
