    Smoking chart

A while back I found what I believe was an Adobe document for charting times, temps, etc. on smokingmeat.com. I'm having a bit of trouble finding it. I like to chart things like that. So, my question is, do any of you guys know where it is located or what do you use?? Thanks _Smoke

    Smoked Cheese

Here is what I like to do. I freeze a one pound block of qualitity cheese over night. I keep it on a low heat and smoke it with a really nice mild wood like alder. I did some for Christmas gift for some folks and now I find myself taking orders for more

    Chucky-Q

I am eating the leftovers as I type! I did save the liquids, they would make a great gravy for some mash 'taters! My smoker has only one vent...at the top. It's propane so other than turning the heat up, I really can't do a lot. It isn't a big deal right now, i just don't want that stuff...
