Tried some country ribs today using the 3-2-1 method, Memphis rub. I foiled them with apple juice and apple cider vinegar - with the mother. Turned out great with a little kick. Barbecue sauce on the side. Baked potatoes too.

I just made one. Here is a picture of my bacon weave. It was very easy to do. I think I used 14 pieces of bacon. There was a real good video on YouTube on how to do the weave. I did it in less than 5 min with thicker cut bacon. Good luck
