    Won't searing limit how much smoke the meat will absorb?  I've never seared a brisket.  I agree with Mrs. B.  Sear a couple of them.

    Like everyone else here, I love cooking que.  Beef, chicken, pork, turkey, doesn't matter.  I love being on top of the food chain.  I am a bit of a bbq snop.  I don't think barbeque is a verb.  It's meat slow cooked using fire and smoke.  I love judging as well.  I judge MIM and other area...

    I've used it and it's pretty good.  It does seem to spark more than RO but not enough to turn me off on it.  Don't know who makes it.  I checked Naked Whiz and they don't say.  I don't think it's RO based on performance.

    I use Best Choice lump, which is made by RO.  Have also used Kroger lump.  Don't know who makes it but it's ok.  I avoid briquets due to the amount of ash produced.

    If there is a GFS store near you, their store brand is made by RO.  I think it comes in 20lb bags for about $13.

    I cut mine length wise as well.  I also leave the stem on.  Helps create a boat which holds the cheese better.

    That looks real good.  I have found most store bought rubs are salty.  I will often mix in some brown sugar to tone it down.

    I would cook the bacon first.  Other than safety concerns, I bet the bacon would be chewy.  Stuffed, smoked burgers are great though!
