If you keep the brisket above 140° it will hold almost indefinitely but may suffer a bit. You can do the brisket pretty much the same way as the butts. Let it rest and cool then wrap in plastic wrap bag it in a 4 gallon ziplock bag and ice bath it then reheat Saturday.
We finish ours in pans covered in foil.
Once your briskets are rested you can uncover and put back on the cooker in the pan for about 15/30 min to firm up your bark. This is what I do and if works great.
125 folks with turkey breasts so your'e talking about four or five 15 lb briskets? If you can cook all of them at once cook hot say 275°/300° put them on around 4:00 Saturday morning you should be wrapping at around 7:00 or 8:00. This is guessing you wrap in foil or pan.
See if your side door is leaking they are notorious for this. I reshaped mine and after several cooks the seasoning sealed it up. You can also get a SS door from Cajun Bandit.

Before I commit to rope gasket or weld is the only option I would prefer to see what he is trying to seal. I build all my cookers and have fixed plenty of the lesser brands. I'll hang around and see if he posts pics. :)

Yeah I know. The silicone he found was 625 deg I would use the lavalock gaskets there instead. He was going to post pics of where he wanted to use it but they aren't up yet. He is not talking about where the cooker mates to the firebox I believe.

Once the door is positioned where you want it choose where the weight touches the back of the cooker and your angle from door to cooker body is predetermined. Start with an empty weight tacked to the arms then add sand to the weight and just tack the end caps on for easy removal.
