Great success. Smoked it with oak chunks and hickory chips. Turned out awesome. I used a simple rub 'southern rub' or something like that.

Hey question for everyone,
My smoker runs about 250-275. I can't get it to stay at 225. This is with the gas on low and the damper wide-open. Any ideas/thoughts on how to lower the temperature?
My sleep in is cured. I have a 18 month old boy who likes to eat bfast at 730. That and it's my wifes turn to sleep in..hehe. Scuba diving? Sweet. I dive as well but being I live in landlocked Greenville, SC not a lot of good ocean diving here (I dove when I lived in the Philippines growing up)

So I've only done ribs and such. Had a blast. I'm going to try to smoke a small butt this weekend (thinking about 5 lbs or so).

Got a few boneless chicken breasts that I'm thinking of throwing on the smoker tomorrow along with a 1/2 rack of ribs. Should there be any issues with the chicken? Going to rub it in the morning and smoke till internal is 165 degrees.

Great post on Smoke Hollow. I have a 34" smoker and love it. The door thermo is about 50 degrees off though. :( So not sure if they'll replace it.
My regulator seems to be doing ok. I smoked ribs this past weekend and it held a nice 230-240 all 6 hours. Half that time with the damper closed...
I had it at the entrance of the garage. The damper was outside and the light breeze pulled 95% of the smoke out of the garage so it wasn't an issue.
I did enjoy the garage setup cause I was able to pull up a chair and read a good bit of history book I'm trying to finish up.

Well, I did 3 racks today.
1 1/2 with my normal Coach's Low Country Rub and 1 1/2 with just salt, pepper and some brown sugar.
Let them marinate all night and chucked them in at noon today.
Smoker kept a steady 230-240 for the whole 6 hours which was awesome. Did the 2-2-1 technique and here...
Hi all,
Getting ready to do 3 racks of baby backs this Saturday for the family. I've done ribs twice before and have used a nice rub (Coach's Low Country rub). It does give a slight kick to the ribs (which I like).
Here's my question - I was thinking of doing a rack or so without any rub...

I have a Smoke Hollow as well (smaller version..the 30") and love it. In fact today I smoked my 1st batch of babyback ribs and a chicken. Man, turned out a yummy.
Temps stayed about 250 in the smoker with the damper fully open. Not sure how I can lower it from there. Worked well...
I do foil the water pan and makes cleanup there much easier. I'll probably start scrubbing the grill racks now..hehe :D Don't want any extra critters munching on anything!

Well, got a question and not sure what's the best method. Do you clean your smoker after a smoke?
I've smoked a few fatties and haven't cleaned out the smoker at all (leave the burnt/crips stuff on the grill, etc). I figure it adds seasoning to the next batch...
