    Here is the jerky one hour in.  I took the foil tent off the Amazn, looks like I should get about a full 3 plus hour smoke with it. When I smoke jerky I prefer to smoke it wet, it might take longer, but the flavor is more intense.  Temp steady at 150, thats one thing nice about the AMAZN it...

    AMAZN arrived today

    Going to try some jerky with it.  One of my rigs is the cajun electric, with the digital control and the AMAZN, thinking it will turn out pretty good.  Will post some pics shortly.

    I love the stuffer.  I have used a grinder to stuff before and a jerky gun, even a horn stuffer.  This vertical saves so much time.  The only downfall to the grizzly is the tubes that come with it are not that long.  The smallest one barely fits the snack stick casings, can only load about 2...

    Dehydrator Temperature

    I use a dehydrator also.  When I am using a cure in my jerky recipe I usually set it about 140.  The key is to pull the jerky out at just the right time.  You don't want to cook the jerky, just dry it out.  Do a bend test, it should be tough to bend, but not at the point of cracking.

    The grizzly arrived today.  All I can say is wow.  I stuffed around 3 pounds of mango jalapeno sausage in less then 10 minutes..   Can't wait to do the snack sticks.  Tried a piece of my collagen casings on the smallest tube, a bit tight, but it should work..
