    Yes, You are right about that ! I wish I could have my ribs side to side with those being sold at the event..so people could taste the difference that smoking makes ( it seems that the meat was being hidden under the sauce) maybe it is a Northern cultural thing ?     New Smoker. Charcoal vs. Electric?

    Newbie Chiming in here, I just got a charcoal smoker (bge) that prides itself on being able to sort of "set it and forget it" but i have found that I really still need to babysit it once every half hour...just to make sure the temp's do not vary too much. Never used an electric.
