Interesting....next time we butcher I think I'll talk to the butcher and see if he'll cut me some chuck eye steaks. Thanks for the info.

    finishing sauce

What he said, sorry I spelled it wrong. What I found about Turbianado sugar is it carmelizes better and thus a better crust on the meat. Turbinado sugar is also more granular in appearance. Brown sugar will be more moist. I was turned onto this by Bill and Cheryl Jamison and have used it ever...

    Baby back rib smoking question

All good options, I'll add my $0.02 I cook all the way through. then vac seal them and put them in the fridge. The day of the event, I take the ribs, put them in an electric roaster with the wire rack in it to keep the ribs off the bottom of the roaster. In the bottom of the roaster you can...

    finishing sauce

Just what I was thinking also. Where I'm at we like our Q a little more sweeter also. I tried the finishing sauce just like it was and found it a little too vinegary (if thats a word). What I did was replace the vinegar with apple cider vinegar and then add Tourbando Sugar to taste.

    Afterburner Almost Here . . .

Dave, I'm with Goose also. I got my afterburner about 3 weeks ago and have done 3 different smokes with it. I cant believe I didn't buy the afterburner sooner. I've been fretting with charcoal for years and I never got time to smoke meat as much as I liked cause of all the babysitting you have...

Today's fare... Beef Ribs marniated in hoisin Sauce

Its funny, a local chinese restaurant has served spare ribs cooked in hoisin sauce for years and I always liked them. But, I never put two and two together and do it myself and use beef ribs!!! Well, now I got a menu for the weekend. Was kind of eyeing the brisket in the freezer but that might...

    Needle Valve needed...

I kept looking and found that same thing you did Terry. Does it have good control and are you able to turn the knob with ease. I did check all the plumbing dept in all the hardware stores (Lowes, Menards and local guys) none of them had a needle valve. I think I might get the one Terry suggested.

    Needle Valve needed...

I'm looking for a needle valve and I cant seem to find one around where I live. Propane dealers wont sell me one unless they install it (what kind of BS is that!!!) and hardware store dont carry anything like it. So I guess I'm going to have to go on-line. But I'm not sure what I should get. Any...

Does this look familiar to anyone?

Brother bought one about 2 years ago. he loves it. It is a heavy bugger!!! He used it for some catering stuff he used to do. It has a lot of room in it to smoke a lot of meat. I thought he told me he could fit 9 racks of ribs in it at one time. It is expensive, I think he paid $600 for it. But...

    Smoking while camping?

I'm of both worlds here. I have many times just smoked food and then vac seal it and throw it in the cooler. It is definately more convenient. However there is nothing better then fresh smoked meat. If we are going to a place where we are just getting away and relaxing, then I definately will...

need help turning my ECB to propane

Yeah bubba is right about blowing yourself up. I was pondering how I could convert my Brinkman over to gas and experimented with a turkey fryer burner I had. Problem is most propane burners need flow. Which means you have to have a high flow of propane to keep the burner lit and not get blown...

    Just sayin' Hi

Well I've used smoked meat in my chili before it definately added a new element of flavor to it. I'm not a competition chili maker myself so I would assume you would have a more refined pallet for chili. But I thought the spices I added balanced with the smoked meat made it really good.

First ECB pork loin roast, disaster, I think!!!

Seems to me you got a couple things you can do. I'd take out the lava rocks, those are for grill'n not smoki'n. I understand what they are used for (keep temps more constant) but use a water pan. You can get temp consistancy and keep moisture in your smoker so the meat dont dry out. Electric...

Had to settle for Baby Backs, now I need help

Yeah I understand about time is not the best gauge for smoking the meat. I used 3-2-1 for some st louis cut for the first time a few weeks ago and really like how the ribs came out. (Previously for the last, I dont know 5 years, I just put'em on the smoker keep them spritz'd and wait until...

Had to settle for Baby Backs, now I need help

Hmm, I'm going to do BB this weekend and was planning on trying 2-2-1 for the first time. From what I'm seeing 2-1-1 is more appropriate and at 235 degrees??

    how much?

Hmm, in the catering bro used to do, he charged $30-$40 for a butt and $20 for a rack of ribs. As with any business its what the market will bear. If the guy is buying two butts and a two rack of ribs, I'd probably give him a deal.

    Last weekends results w/q-view

Sorry about the pic size, I did this last night before I went to bed so was trying to get it done. As for the 6 hrs, I neglected to tell you the final thing. After I got the butts up to 165 degrees I wrapped them in foil and then put them in the oven at 250 degrees. I had to leave and couldnt...

    Large propane Mod

Here is my results: This is an overall view of my grill'n area. Pic of the hookup for my Grill Hookup for my smoker Tee where the Grill and the smoker split. Where the pipe hooks to the main gas line. I had to remove the regulator from the grill because as you can see there is...

    Last weekends results w/q-view

Well last weekend was a few firsts for me. First time smoking with my new mod (Afterburner-H). First time trying a fatty. First time smoking ABTs. And first time posting the results here. First the back story, I had planned on doing a day of smoking on Sun. However, due to weather on Sat, had...
