    Whole Doe

I don't think anyone said their way was the best. And what works for me is always limited to my own experiences. It's your deer and you can grind the whole thing if that's what you want to do. Just like boiling ribs "Hey you paid for them " and you can do what ever you want to them. If someone...

    Whole Doe

I think that when you hang them in anything but a controlled area ( like a walk in cooler ) @ 38 °  to  40°  you risk the chance of spoiling some of the meat. I have friends that don't like venison  , to each their own but I'll wager that old  grand pa hung that thing for days on end and the...

    Rollin A Fatty: My Version

The reason is to tighten up everything . You twist the plastic wrap good and tight ,this seals the ends and gives it a uniformed look. and the temp of one of these is 165.

    Is cherry wood safe

Cherry is a great smoking wood. It's not a native tree here in central Minnesota but I get it at one of the home stores and always have some on hand. One of the best rib joints I have been to uses nothing but cherry for their ribs, Smoky D's in Des Moines Iowa and they do ribs right. Bill
