    I would tend to disagree. If your dream is to open a BBQ joint you should be tickled pink that places are closing up shop, because it's decreasing the supply. When demand increases again, aka when the economy turns around, it will be a more lucrative market.

    The WSM (Weber Smokey Mountain) seems like a popular smoker around here, and are pretty cool looking and not too big. Can't speak on the temp's though as I've never used one. They have some tips here to help with smoking in cold weather with this particular rig...

    Keep at it man, i know the feeling all too well. Brisket can be a tricky one, i have turned a couple into shoe leather... But man oh man, once you get it down, you will be glad you stayed persistenent. Good luck, and next time you get er goin and cook something delicious, show us some pics!

    Thank you. I smoked 2 hrs naked at 235ish, then 1.5 hrs in foil at the same temp, then out of foil for another hour. Pretty much the 2-2-1 method, but tweaked a little.
