I just had mine painted with the Rustoleum high heat paint and it works great. Yes it will come off around the firebox but you can just paint it back on.

It looks like work is in order though. I guess I could have brought my smoker today and cooked for everyone. Hmm. I might have to work on that for next year.
I do mine face down in about 1/2" of pineapple juice and rub mix. It keeps the first few spiral cuts from drying out. I might also rotate it every hour or so also. It just depends on the mood I am in and the time I have.
Baste them every 15 to 30 min with the juice from the bottom of the pan...
Are you wanting them like butts or like store bought Ham? If I am not mistaken, if it is fresh you will have to cure it to get it like a store bought ham.
