Looks like I am at my point limit for the day, so I owe you a point.
Yours has a much more pronounced smoke ring than the one I tried that was wrapped in bacon.
I did a bacon lattice that went around and semi overlapped.
I will have to try it like you did with less bacon and use a few toothpicks so more smoke will make it to the meat.

I did my first trimmed yesterday. It took mine till the IT hit 207 before it was toothpick tender. When you insert a toothpick it should slide in like butter.
Perhaps leaving yours on longer will give you the tenderness your wanting?

Perhaps trying to place the unit on 3 bricks or cinder blocks so that its off the ground and stable. I would not try standing the bricks on end, leaving them flat would seem to allow enough air under the unit.
I have to say the sardines threw me for a loop as well, but you reeled me in all the way down the list of super looking food.

Save the foil juice from the 2-2-1 method.
De-fatt the juice, then add close to equal parts BBQ sauce and a bit of rub.. Makes for a dang fine tasting sauce

I put away 3 servings in the freezer that are vac sealed, but I kept just enough for a sammy or late night snack in the main fridge
