    17x23x3 and they hold 10 racks each with an area to grab on the sides without touching the ribs.

    Nothing wrong with the 3-2-1 or 2-2-1.  Just felt like I had gotten to where I was constantly fiddling with them, spritz, wrap, unwrap....  Decided it was time to get back to the basics and see what I missed, I'm a couple of smokes in now and don't seem to miss any of it.  I'm sure I will add...

    Yep, just rubbed them and put them in the smoker and retrieved them 5 hours later.

    8 racks of bb's about 2 pounds each.     I cooked 3 bone in breast for my wife this evening.  I brined them with http://www.smokingmeatforums.com/wiki/tips-slaughterhouse-recipes-for-poultry  but didn't have the cajun seasoning so I used Emirils Essence Chicken Rub in it's place.  I only brined them for an hour and then I injected them...
