Mmmm I love gyros I bet those tasted fantastic with the fresh dill and cucumber... I love how smoked pork butt goes well with fresh cilantro and onions on tacos so I can only imagine how good a brisket gyro would be!
First time trying this so we will see how it turns out but I started with a pork butt seasoned with some dirty bird.. About a hour in... while waiting for it to hit 160 I juiced some oranges and cut up a onion. I also finely grated about 8 garlic cloves. it hit 160 so I pulled it to wrap now...

Nice, I've watched videos where people do a sort of reverse sear and cover the steaks with a aluminum pan with wood chips burning in it..might have to try that out one day
