So my 2 Butts just came out of the oven. Internal finally hit 190. Is it safe to keep them in a cooler until morn (7-8 hrs) before I pull them?

So my wife didn't end up going to the party so I had her keep an eye on the smoker while I was gone. The smoke is still going. Seems to have leveled off at 145 but after reading about this I know to avoid doing anything but wait. Yet another good tip from SMF Did a batch of beans with...

I can't tell you how much I wish my remote thermometers were here (still in the mail). All I have at the moment is my pocket instant read. From other threads it looked it looked like about 1.5 hrs per pound making it about a 9 hour cook give or take. This sound about right?

My first smoke, Q-view added at no extra charge

Check the text below the last pic and I give a run-down on the almonds. They are really worth doing. I put them in a disposable pie pan with a bunch of knife slits in them.

    Special on Nu-Temp remote thermometer

So I was crusing around the net looking for opinions on the Nu-Temp remote thermometer and found this deal on another forum. It beats the price that is in the sticky above by $20 and the remotes are better too. http://www.nu-temp.com/tvwb/ It seems to be still valid, I just ordered a remote...

Haitian pork, in this case RIBS

Yumm, I'm totally doing this dish for tommorow. I also have some deer and elk ribs I'm going to throw in as well. So how much soy do you use? I would guess about 1/3 C. Is that shortning or lard?

    new smoker advice

I'm in a small town where no one sells smokers. I would love to see them first-hand and get a feel for the quality but unfortunately I will have to order one without seeing it. I will check out the specs on the smoke vault. Have you used the vault?

    new smoker advice

So I have been overwhelmed by the Q-views. I don't have a smoker and I have reached the breaking point. I am looking for a little unit to start me off right. I want a gas unit so I won't have to tend to it quite so much. I will upgrade to a wood unit later but right now I have a young baby...

    Hi all
