I've seen, made & eaten chicken & turkey sausage in the smaller diameters both fresh & cured/smoked, but never in the "summer sausage" size. Not sure about this one.
Everything looks good/right except the ribs to me. I have never gottten a "bad" rack before, so I'm not sure what to compare them to. I get mine most of the time at Costco & they are always good.

I got the Northern Tool grinder & have used it about 8 times & am very happy with it. It has got lots of power & chews right through the meat. I would think a grinder with a smaller motor would bog down or eventually burn up. Not to say mine won't but some of the ones I was looking at between...
