    I have an OK Joe Highland for 3 years now. I did the sealant around the firebox and added a convection plate. Has some small leaks on the CC but to me not a big worry.     I did one with jimmy dean sausage and the fatty was filled with sliced waffles, then all wrapped in bacon. Served with warm maple syrup and homemade potatoes, onions & peppers with shredded cheddar cheese mixed in. Yes, it was a big hit!

    Yep, that is about right! Brisket here in the Northeast is way to expensive so I usually do chuck roasts for either sliced or pulled or chopped.

    Yes, I have done that many times due to the weather. I do not wrap the meat either and set the oven for 250 degrees
