Minion Method and high temps question

With the vents 100% open at the bottom and a full chimney of lit charcoal to start, you MAY see temps that high, but once you put unlit charcoal on, the temp will drop and then they may spike. Each smoker is different, but for me to maintain higher temps I choose not use the minion method. I may...

    Charcoal baskets

I made on myself last week out of scrap expanded metal and tack welded it together. It was actually my very, very first welding job. But you can go to Home Depot buy a piece of expanded matal for about 10 bucks, grab some brass all-thread stainless washers and nuts and make one. Just take the...

What I did yesterday (mods trial and run)

The more I think about it the more I wonder why we try to fight nature and not just manipulate it. What I mean is heat wants to go upward so why use a side firebox and try make it flow where it doesn't want to go? I think a bottom firebox is the answer. Even with the Bandera the side firebox has...

    Thin Blue Smoke? How??

I find the smoker thinner when there is plenty of air for combustion, which may result in unwanted temp spikes. For me, it's all according to which smoker I' using. For the BGE, I'm not sure about how it's designed, so I really can't give much input. But, what will offer is a suggestion. Pile...

    Building an italian offset smoker

I have to agree Ryoma. This type of smoke is the most versatile and easier to maintain. Only decision now is how big? Visit this site to get some specifications on how to properly size the smoker. http://home.nik-martin.com/smoker/Default.aspx

    New Braunfels Bandera Smoker

Personally, I llike the vertical versus the horizontal. Oklahoma Joe's use to make a bandera type smoker, but I'm not if they still make it. I found one on craigslist for a good price and the owner says it's about 1/8" thick which is thicker than the Bandera. For me I would just repair it...

    Making your own smoker

I'm not real fond of the side firebox. I prefer a rear or under firebox.

Finished Some Mods to the Chuckwagon

I hope they work to get rid of the hot and cold spots. I decided to not go with tuning plate frist to see if it will work. I lower the stack and put a plate vertical against to opening from the firebox to the smoking chamber. I'm testing this weekend. Here are some pics of the mods. Warning...

Is a chilli without beans still a chilli ???

Cincinnati Chili and Greek Chili don't have the beans in the chili. I believe those who want beans have to add them naked on top. Two Way Chili is simply chili served over spaghettiThree Way Chili is chili with the addition of shredded cheddar cheeseFour Way Chili means you add on chopped...

    Looooooong butt

I've had several smokes just like that one. My first smoke I gave up during tha plateau. It's not uncommon for me to encounter smokes like the one you described. Plenty of coffee, snacks, tv, computer and music all help. Just don't look.

    Possible New Smoker??

Those are a bit flimsy for me. My three smokers cost me under $60 plus $20 in gas to go get one of them. So for eighty dollars I have three great smokers. And, now I'm in the process of shopping for another one. Bigger and better, a bandera type smoker, and making one of my own using this plan...

    Smoked Porkchops

I prefer pork steaks over chops on the smoker. Chops are better to me if they are fried or grilled. There seems to be a lack of fat with chops which lends to dryness. Blackened chops are great too. That's what we usually do with thicker chops. http://commerce.bayou.com/chefhans/i...ct_detail&p=31

My first time on a forum

Welcome to the forum Smoke Chef. If I had to do a vertical smoker I would go with a Bandera w/ SFB. It's $249 at the Academy, and I think it would be a better smoker than the ECB square vertical. Maybe a bit more money, but a more versatile smoker that you can actually burn wood in without...
