Looks great...I have not smoked a butt yet, but plan to next weekend for the 4th... I have a question for ya...does the wood chunk holding your thermo mess with the temp? Thats a great idea and I may have to just borrow it from you... Good luck, look forward to some qview later!!!

    St Louis Style

Welcome from 4 hours east...next time in KC, hit Fiorella's Jack Stack in Martin City (just south of the city on 150 Highway and Holmes road. Their meat tends to be better cut than Gates (and they don't yell at you when you come in...hehe) Anyways, good luck with the smoke...Always love to see...

First Brisket and BBRibs w/ QView

Thats awesome Goddess...My dad and I were talking about salsa yesterday (he has a bunch of tomato plants with about 25-30 tomatos getting ready to ripen...) I may have to mod your recipe to include those tomatos :-) I used them in my chili too...they just come off with such a good flavor.

    Stormy Day Multi Smoke w/Qview

Does humidity affect the smoke at all? that would be something to investigate... Great QVIEW...looks very tasty!!!

First Brisket and BBRibs w/ QView

They did pretty good, although I think next time I will take them out of the smoke and finish them on the grill...the bacon could have been a little crispier... I have a lot of people who need the milder peppers...but they really gave a different taste. I may try chopping some up and putting...

    marinated prime rib w/qview

Great QVIEW..thanks for sharing. Did you grill the asparagus too? I am going to try and smoke some next time it is on sale (its a little pricey in MO right now) I had smoked asparagas at a favorite BBQ joint here in town (Firoella's Jack Stack in Martin City for you locals) and it was incredible!

First Brisket and BBRibs w/ QView

Hello all, My parents were out of town for Fathers Day, so we had the whole family/extended family over for vittles yesterday (14 people in all). First, let me say a BIG THANKS to Smokie Okie for her reciepe on the brisket...it was wonderful. I took her advise and seared the meat black at the...

    Drinking more......

I find that cheap beer (natty light...miller lite...etc.) is always best when doing something...Like mowing...grilling...cleaning...whatever. I save the good stuff when I can sit with a good cigar (Partigus Black...H Upman Robusto...etc). I agree though...we were on a float trip just a couple...

    newbie gosm help

Ohhh...gotcha. Well good luck anyways. Is this your first smoker? I found on this site a post that talked about seasoning the smoker...one thing that was recommended was to spray the inside with PAM, or some other cheap spray cooking oil (similar to seasoning cast iron)... Have a great weekend,

    newbie gosm help

I just bought mine a couple of weeks ago....that pop rivet should not already be on the pin... Try using a set of needle nose plyers to get it off the pin...it may come off if you pry it gently back and forth until it rocks off the pin... If you end up destroying it...head over to your local...

    Smoker Shed Pix/Suggeston?

If I made a shed like that...my wife would make me sleep in it (which wouldnt be sooo bad, except the Humidity in Missouri is terrible :-) hehe Would love to see pics if you end up building one! Sounds like a good place to smoke meat, cigars...play cards....hmmm, its starting to sound like a...

    Smoked scallops wrapped in prosciutto

Can I ask if the scallops still turned out tough or rubbery? The reason I ask is my wife is a HUGE fan of scallops, so I cook with them quite a bit. An overcooked scallop will turn rubbery and tough. I am going to do more research, because most of my recipes for scallops involve saute or...

    Try Cheese sticks!

When I use my bakers bag to fill them, I tilt my pinkie finger up...it just seems more civilized that way hehehehe :-) I am going to stuff some Poblano's this weekend...Quite a bit bigger, but I think the taste will keep with them! And they are mild enough that the wife will eat them...

1st Smoke / Fathers Day Present!!!

Looks like we have heat!!!! I wish I would have posted earlier and not let those birds sit so long!!! Thanks Pineywoods!!! I restarted the fire and it looks like the heat is on the up and up...it was at 225 and rising when I just came up here. I still am unsure on the vents...I know with...
