When Do You Rub the Rub?

Last time I did a Butt, I applied the rub the night before and wrapped it in plastic wrap. The next morning, it was a big, sloppy mess. I'm afraid that I rubbed on the rub too early and the salt drew the juices out of the butt? What's the optimal time, in your experience, to rub on the rub...

    Sleeping and Smoking

I've read plenty of stories about people who run their smoker through the night and go to sleep. Is that safe? I live in New Orleans, and my backyard is 250 sqft. The houses are pretty closely packed together. I'm worried something crazy might happen and I'll set my whole neighborhood on...

    sNp/Smoke-N-Pit charcoal grate/weld/purchase/question

For my firebox mod, all I did was buy a sheet of expanded metal from Home Depot. It was roughly 12"x 24" (I think?). I bent it into a "U" shape, but with two right angles. Then I slipped it into the fire box and voila, I was done. No welding or cutting or nothing!

    Thank You Everyone!

Thanks to everyone here who helped make my maiden smoke a smashing success! It rained on my twice, and my wife nearly walked out on me during the frustrating football knock-out fiasco, but it was all worth it. Everybody loved the pulled pork, but the star of the show was the smoked turkey...

    Rain

Woke up early to start my first smoke with my char-griller (I'm the guy who had all the trouble with the knockout footballs. I had about 4 hours smoking behind me and now it is raining pretty good. I'm not gonna give up. I assume a little water won't hurt the smoker, just make it harder to...

    Help! Trying to assemble Char-Griller!

    1. Oh, I did destroy it. And then I brought it to Lowes and they gave me a new one. 2. I didn't even mention the hassle I went through trying to find a 7/8" drill bit to install my new 3" temp guages. That sucked, but it was very satisfying to put those bad boys on the smoker. 3. I'm...
