im hoping sum one out there can tell me in laymans terms how to post pics on the new forum
ive tried posting from my album only can get 1 pic then icant put any others like be fore
smoked a chuckie for dinner with oak and apple
250 for 2 hours then put in a pan with a can of beer covered with foil
back in the smoker for 1 hour pulled out then back on rack for half hour
let rest for 1/2 hour

i have this prob from time to time
i use an ecb but bark on wood caused it also i started using smaller pieces
ive also found out that less is more for flavor
my ecb vert temp gauge is a steady fifty degrees low on the door
but the butts ive done are about the same size as yours
i smokem at 240-250
i do a 4-2-1 method on mine they turn out great
but like the others say bring to 160-165 then foil
good luck
its working great after a few mods and im using a grill wok
for my longer smokes
it pretty much wants to run steady at 250 depending how i stoke it
ive got the thing figured out to where im not scratchin my head raw
on keeping temps going hay wire on me
