    Advice for an Offset Smoker

There are some big smokers for sale pages on FB. Think going used 1/4” construction is going to be the best bang for your buck. I bought a Gator Pit Party Gator for $1100 a couple years ago online and it’ll survive the apocalypse.

    Found a new Lump

Will do. Think I’m going to do a cook tonight. If I like it I’m going back and buying the rest of the pallet. Takes a lot of fuel to cook on the Dumpster and I don’t always want to burn wood. What I really need is a burndown barrel but haven’t gotten that far yet.

    Found a new Lump

Thanks for the heads up. Been looking for cheap neutral lump to run in my TMG Dumpster for direct heat cooks, went into the local Ollie’s and picked up several bags yesterday.

    Pecan Pellets- New favorite!

I really like them but they’re expensive and take a while to get delivered in my experience. Save them for special cooks and use lumberjack pecan which are $9.99 for 20 lbs at Rural King for most stuff.

    Custom Backyard/catering/popup Rig Build

From the website and talking to Brandon TMG is about 24 weeks on tank/dumpster builds. The others are 40-50.

    Custom Backyard/catering/popup Rig Build

Hey all. I used to do some catering and custom cooks years ago before my kids got into every activity under the sun. Back then I had a Peoria Meat Monster which I have long since sold. Now I’m itching to get back into it and am debating on what type of setup to order. I initially got the itch...

    Charcoal basket in an offset

I’ve thought about this too but had concerns about safety.

    Charcoal basket in an offset

The problem for me is that I can’t fit the same number of briskets from a 250g in an oven. Maybe if I had a few on standby somewhere. Or a huge commercial oven. And it’s a lot easier to leave them all on one cooker than transfer them to another to finish. I have been looking at propane assist...

    Charcoal basket in an offset

I think we all understand that the wood makes the flavor, he’s just trying to get some BTUs to have unattended cook time after the stall in the same cooker he started in. Very interested in the results as I’m kicking around the idea myself for a 250g.

Camp Chef Woodwind Pro 24 with Sidekick Flattop in Evansville, IN

Had it about a year and a half, always covered on a covered patio. Comes with original book, receipt, probes, sidekick with griddle and propane tank, and grill grates. $750 obro. Located in Evansville Indiana. It’s been a solid workhorse for our family and everything works as it should. Have...

elevate charcoal on half of Primo XL

You probably already know this, but the grill grate can be flipped over which will lower the cooking surface a couple of inches closer to the fire. I’ve done this with steaks after a reverse sear. Oddly enough one of the things I like about the Primo is the ability to keep some distance...

    SnS or Primo XL

I felt like the few hundred bucks extra for the 400 was well worth not ever regretting buying the 300. Plus with the oval shape it’s super easy to set it up for direct on one side and indirect on the other, which is how mine has been set up ever since the initial cook. So you’re effectively...

    SnS or Primo XL

I had this exact same dilemma a month or so ago. I had a BGE for 10 or so years and really liked it. I moved and it wasn’t in the best shape so I gave it to a buddy for helping me move. I got a Weber to grill on for the time being, added an offset and a pellet grill over the last couple years...
