The smoke would just be on the edges of each slice this way, and maybe a few penetrated slices.

So on an image of US beef cuts I see where the 'Round' is, but Eye of Round? Is this a particular part of the round?
Oh also I hear gmg after sales is phenomenal. Being in the UK I go via our local distributor and haven't had much need for after sales except a replacement meat probe which was sent free and within a few days. From what I've seen from the US folk, replacement parts (if needed) are always sent...
Green mountain also gets built in China. I think rectec are built in the US still. Not sure about the others as relatively new myself with a Daniel Boone model gmg and I'm happy with it.

I'd like to soon start making my own bacon, what guides would people recommend for a first timer? What you've done seems easier than most I've read, is there an actual guide to follow to do this version?

The Probes I ordered have a 6 month warranty. There is of course the misuse clause. These are probes that would work on the BlueTherm Duo so would assume they are the same.
Just FYI
Seems the BlueTherm duo only logs with an active Bluetooth connection to phone/tablet etc.
Once this connection stops the logging stops and it cannot be plugged in at a later date to get graph/details.
For this reason I opted for the Thermadata TCD also from thermoworks

If the tappaque is the best of both worlds of the TCD and BlueTherm duo i would maybe wish I held fire on ordering.
My only consolation is what I bought is made by the same guys that make the thermapen.

I have the Maverick et733 but thinking about getting a TCD from ETI (the guys who make the thermapen and bluetherm duo) but it's expensive. I want a data logger and another 2 probes wouldn't go a miss! But I'm also undecided between the bluetherm duo and TCD, bluetherm has BT but it's the same...
