After an hour and forty five minutes. I will be using the 3-2-1 method. The particle board is my version of a windbreak and seems to work well. I have the smoker in an unused dog kennel that is covered and with the particle board it stays pretty well sheltered from the wind.

Where at in the infield? We are behind the Nationwide garages near the restrooms. We always have the Tiki Bar each year. It was last year in KC that I experienced my first real smoked food and been hooked since. We didn't get to go this year either - but we did get paid for the spot...LOL
