    Chris, thats the sign of a hardcore smoker, dont matter if its raining, snowing, sleeting, it might slow things down abit, but the smoking must go on! Im the same way, only i dont have a covered spot to move my smoker, neighbors think im a fool for sure....but thats ok, Ive always got good eats!

    one more thing... If you are smoking jalapenos only then the rack doesnt need to be as tall, I made mine taller so it will also hold banana peppers without them touching the grill.

    Im eagerly awaiting what management has to say about it. I came up with the idea and all, but my version was on a much smaller scale. I sure hope they dont expect us to do all the cooking! And yeah, it would definetly take a TEAM, more like a small army. Ill keep you posted.

    Eric, Welcome to the forums, lots of good info here! You will love the new smoker, sounds like your off to a good start. If you are doing ribs I suggest the 3-2-1 method, pretty much foolproof, and they come out so tender the meat is falling off the bone. read more about it here...
