I have never frozen a whole smoked butt. I have, however, frozen pulled pork using my vacuum sealer. The machine works really well and the pork reheats nicely.

I am not sure how long you plan to leave your brisket in the ice chest. I have left them as long as 4 hours wrapped in towels and they are still piping hot when opened. therefore, I would not worry about heating your ice chest.

I've never brined ribs of any type. I smoke my spare ribs for 6 hours using the 3-2-1 method. Never having smoke country style ribs I can't imagine them taking much longer than 6 hours to finish.
