    From what I understood he is going to slice 1/2" x 1/2" strips... deep fry or bake them and serve them in a cone so the end's can be picked up and served with several dipping sauces to try.     If it happens I will post the pics but that is a few weeks away.

    You could cut them up and bag/zip lock them in the wet brine and then to the fridge.   One method to keep oxygen out of the equation.

    Rotisserie Tips

    Get a wireless dual probe temperature system and attach one probe / transmitter to the rotisserie rod (on the exterior ) or It works - either that have a estimate of time needed and bust out the instant read thermo's until you reach your internal temp. Welcome to the forum!
