    What smoker type is best and why?

    I'm a pellet smoker fan. They are a bit expensive but the end product is consistent and easy to control. Great smoke flavor and always TBS.

    3-2-1 rib method

    I generally use 3-1-1. Get a nice bite through. Nice and tender but not fall off the bone. Judges don't like that. The last hour I use to put a finishing glaze on to give them a nice shine and sweet taste.

    Gumbo looks great. I could do without the Okra. Never have been able to stomach the stuff. It's a texture thing.

    Welcome aboard. Glad you joined up. The only potential issue I see is the firebox may not be big enough to drive them both.Time will tell. If not, you will have a great warmer.

    Done it several times. The butt will finish first then you can concentrate on getting the brisket just right. Sounds like a great feast is coming your way

    Most often you will see thighs. Legs also work. Folks like food with handles.
