Hey Mark. It wasn't easy to find. I had never used Yoshidas so I wanted a small bottle to try. If this turns out as expected, I'll be heading to Costco

I generally only do full packers. I will trim fat between the point and flat but not separate them completely. I start fat side up for 4-5 hours or 165* which ever comes first. Then I split them and pan the flat and foil the point. From that point on, I cook them for tenderness more so than temp.

Never had that problem on my GOSM. I have used the cast iron chip box and a stainless steel box I picked up somewhere. I do know my door temp gauge was off by at least 50*. I discovered this on my first smoke with the unit. I have always used another temp gauge.

Count me in. Hopefully I will have my rig up and running by the time this comes around. Will be pretty busy during competition season but will make every attempt to attend.
My door thermometer was way off when I got my unit years ago. You might want to invest in a remote therm or a thermapin. I use both and have had no problems. Some door thermometers are adjustable. You might make a note and check when your smoke is over.
My GOSM generates lots of smoke initially...
