    Hey Mark. It wasn't easy to find. I had never used Yoshidas so I wanted a small bottle to try. If this turns out as expected, I'll be heading to Costco May have to get another refrigerator just for my stuff.

    Today's butt is cooking on 60% Peach and 40%Mesquite. It is easy to experiment when your a pellet smoker.

    Brisket Experience

    I generally only do full packers. I will trim fat between the point and flat but not separate them completely. I start fat side up for 4-5 hours or 165* which ever comes first. Then I split them and pan the flat and foil the point. From that point on, I cook them for tenderness more so than temp.

    My door thermometer was way off when I got my unit years ago. You might want to invest in a remote therm or a thermapin. I use both and have had no problems.
