    Yeah the Costco one I got was prime. They're just so big 16lbs. They're tough to handle. I need a 10-12 lb packer brisket but not sure if they make them that size.

    It's tough too with the offset because I have the point towards the firebox so when it reads 200 the flat is only 175. Not sure how to fix that.

    So I'm breaking in the Horizon next week with my first ever smoke on an offset. What do you guys recommend for the first cook? Something not too difficult that will make for an enjoyable cook. I've got family coming in town and would prefer them to not eat rubber. Thanks guys!

    Newbie question

    Thanks Gary. I actually noticed it after my first fire in the firebox. I tried scrubbing it off after the metal cooled with just a rag and water but it's almost like a sticky glue substance. I can pick it off my my fingernail if I really scrub it.
