    Rub of paprika, garlic powder, onion powder, salt, pepper, and brown sugar with a light coat of mustard for a binder. Sat in the fridge over night.

    Thanks Craig, that did help some. Here are more details. I use a propane masterbuilt, and yes I do have a good digital thermometer. I brined with a simple brine of salt, brown sugar, and a bottle of italian dressing. I made a herb butter with thyme and sage, and put it under the skin everywhere...

    Well guys, the ol masterbuilt didn't disappoint. It held strong at about 255, and in about 5 hrs, brought my bird to 165. (despite below freezing temps) I appreciate all of the good advise, and best of all, no oven was needed! This was my first turkey, and I have to say it will be hard to top...

    Well, it's turkey day, and it was 22 degrees out when I got up. Plus side is it's sunny, and no wind. So I moved my smoker to the south side of the house, in the sun, and I'm going for it! I think its gonna be fine. Smoker temp is up to 250, and holding strong. Thanks for all of the support...
