I would call LEM customer service and ask them. They have always been very helpful whenever I have called them, and I have called them asking some off the wall questions about what a stuffer can do. I think I read somewhere that the newer cabelas grinders will work with the LEM too.

I get expanded metal at a local welding shop, for a little extra they even cut it to size for me. That's the only place I know where you can buy metal in my town. Maybe in a bigger town they have welding supply or metal supply stores that would have the stuff. Sorry I couldn't be more help.
If you get a bigger smoke tank think about shelves in there, the beans under the butt catching some of the drippings are awesome. Great smoke you had there.
Great smoke ring on the burgers. I think you are right about the air leaks, seal it up and I think you will have the temp problem solved after you build a baffle between the firebox and the smoke box. Great looking mods so far.
