    As far as I can tell, the only difference between the 350 and the 380 is the length of the sealing bar (12" vs 16" respectively). Correct?

    I'll have to give that I try. I always leave extra space in the casing at the far end (if you will), but leaving it open-ended sounds more effective.

    I took it apart last night and the heating wire seems fine. I can't find any open circuits or burnt components. If I had a circuit diagram, I might be able to do more troubleshooting. That said, I've been cussing about this thing for quite awhile. I don't know if I WANT to fix it!

    Range isn't the same type of issue with WiFi as it is with Bluetooth. As long as the thermometer is within your WiFi footprint, then it doesn't matter where you are - you're phone app connects via the internet. Big difference from RF or Bluetooth.

    Yeah, you can get a PID controller with a solid state relay. You can use it with on/off control on a short cycle or with a proportional output, with or without the PID control. I do that with my mash tun and hot liquor tank on my homebrew (beer) system.
