You say, "When they cut off a slice of meat they were sure to brush on some of the red paste." & "They said it would spoil the meat if the paste was left off."
I assume you are carving a piece off of a larger slab of meat and the paste is put on the cut surface of the remaining slab. Is this...
I took it apart last night and the heating wire seems fine. I can't find any open circuits or burnt components.
If I had a circuit diagram, I might be able to do more troubleshooting.
That said, I've been cussing about this thing for quite awhile. I don't know if I WANT to fix it!
My FoodSaver Professional II just burned out the heating wire, so apparently I'm in the market for a new vacuum sealer.
Has anyone purchased the new VacMaster Pro 275 yet? If so, what do you think?
Or should I just suck it up and go for the 350 or 380?
Or are there other recommendations?

I'm not very good at doing it by eye, so I actually use a spoon as a measuring device. I still get more variation than I'd prefer, but I'm getting better!

Yeah. I'd like to know as well...
ThermoWorks Smoke specs say, "COMING 2017 - Smoke Gateway (Wi-Fi) & Smartphone App"
Depending on what they charge, that might me a good option.
I might still be able to get to it, but Father's Day is a homebrew club meeting and I have to cook for that! The family doesn't like adventurous burgers, so this would have to just be for me...
It was 3.75 pounds and I used all of it, although probably applied more heavily than you would with a chicken (especially since I scored the fat cap and filled up the crevices), so you could probably make it work for a five pound bird.
I would've liked to squeeze a bit of lime juice on it when...
Yeah, you can get a PID controller with a solid state relay. You can use it with on/off control on a short cycle or with a proportional output, with or without the PID control. I do that with my mash tun and hot liquor tank on my homebrew (beer) system.
