I've learned that when it comes to smokers, you get what you pay for. The WSM is the king of the bullet smokers. I have to say, my Napoleon Apollo is pretty damn good as well.

I've got the TP08 and I love it. Probes are pretty accurate and it's got some good distance on it. Overall I was happy with my purchase.

So for my third ever smoke, I decided to try some jerky. Got some eye of round on sale at the local grocery store so that was perfect. Sliced it last night and created a marinade using lots of random spices. Just put it on the smoker and it's cruising at 225 - 250 right now. I'm wanting some...
The biggest issue I had was them falling apart when I rolled them. Not sure if I spread the ground beef too thin or what...Next time might use some egg and a bit of bread crumbs for binding...any suggestions?
When I was using chips on a smoker box on my gas grill, the first couple times I soaked them, and then I didn't soak them. Makes no difference really.
The first smoke I did on my bullet smoker, I used chips. I made sure I spread them around the charcoal basket, and they did just fine. I...
I set up the charcoal basket for a bit of a minion method. It wasn't going to be a long smoke, so I think that right there was part of my problem. I don't think I let the charcoal get hot enough before I dumped it in with the rest. The leaks in the rings I expect to be taken care of on their...
So I might have forgotten pics in all my excitement. I was able to snap off one quick one of the finished product. They tasted amazing and the hickory flavour was perfect on them.

So after a quick cook of some fatties, I realized that sealing it up might have been detrimental...I just couldn't get the damn thing much above 200F. No matter how much I opened the vents, nothing would help. I'm wondering if I just didn't have enough charcoal at first iny chimney...I'll have...
So, after checking again and pressing the gasket back onto the door...it's adhered! Both doors and the lid seem to be sealed quite well, and I am noticing very little smoke leak. Gotta say, it was a good $5 spent!
This will be my second cook on my Napoleon Apollo, and I plan on doing a couple fatties today. Or meat rolls as my wife prefers to call them! First one is going to be a bacon cheeseburger one. Stuffed with cheese, onions and pickles with a bacon weave on the outside. Second will be stuffed...
So, my first cook on my brand new Apollo (Very similar in design and build to the WSM), I found that the doors didn't seal properly and there was a lot of smoke leak. Made controlling the temps kinda tough, had a hard time keeping it down to 225. So, this week, I bought some wood stove...
I would suggest the Weber Smokey Mountain or something similar. I've got a Napoleon Apollo (very similar design and construction to the WSM), and while I've only done 1 cook on it, it worked perfectly. I got some great smokey flavour on it, and it was simple to use and set up.
Glad you were able to get one. I've seen pics of them with different therms, so I can understand that. I need to check how bad the leaks are when I get around to actually using it. Might have to get some gasket or something... We'll see.
Finally got my Napoleon Apollo assembled. It's a lot bigger than I expected. A nice sized 19" grill shoukdngivee lots of room for some great food. I have noticed though, that there is a pretty good gap at the doors. I'm worried about some major smoke leakage. Any suggestions on how to remedy...
