In reading the description on their website, I would say that it should be what you are looking for. Nice size cooking chamber, 3/8 in steel pipe construction, etc. Since it's close, no shipping cost to add. I would be happy with this smoker if I was in your place.

That's what I was thinking. Horseradish goes so well with prime rib, I thought this white sauce would be good on beef sandwiches as well. I believe I have some smoked chuckie in the freezer. May have to try it this weekend.

Thanks for the recipes, I'll have to try them. The white sauce is something I've heard of but never tried. I like horseradish and that is what caught my eye with that recipe. Have you tried it on beef, such as a chuckie?
Haven't done the research but I agree with the others. I've only done packers and I've never had one come out dry. And as they said the fat adds to the flavor.
As a guess, I would say if you catch the packers on sale for less than $2.00/lb, you would be money ahead.

Great looking tri-tip. It is a must do for me. Tired of the cold weather. Has put a crimp in my smoking. Hope we've seen the last of the snow and unbearable cold. My to do list is so long that spring and summer may not be long enough. Thanks for sharing.
