Like you said that's what it's all about. I had a similar situation with my daughter, just makes you love them all the more.

The rest allows the juices to be reabsorbed into the meat. If you have time it's great but if you don't stick them right into the fridge. They will still be delicious.
I usually brine less, maybe 8 - 10 hours or overnight and then a good rinsing afterwards. I usually through some oj, brown sugar and maple syrup in my brine too.
