When I lived up north I never used it, especially after the kids grew up. Now that I have time to use it we never seem to. Went in a few days last week and the thermometer said 90 degrees. My wife loves it like that. Me, not so much.

Nothing better than a rib smoke on a Sunday.
Made a rack of baby backs, seasoned with Jeff's rub, Dutch's Wicked beans and some home made slaw. Used a mix of Jealous Devil and Royal Oak lump charcoal and a half and half hickory/cherry wood mix.
You got an amazing deal there. Congrats. I'm on my 2nd WSM18 and really like it. If you are mainly smoking for 2 or 3, the WSM is a great smoker. Sometimes I wish i had a little more real estate but the reality is I don't need the extra space very often. Any questions just ask. Welcome to SMF.
Packaged in cryovac. Got them yesterday and sell by date is tomorrow. I find that is the usual at the Costco I shop at. It's never more than 3 or 4 days.
I would freeze them individually as would be easier to store them in my already full freezer but I'm looking at all that liquid and thinking...
I picked up a 3 pack of Costco baby back ribs yesterday for a smoke I was going to do today.
Now plans have changed so I am thinking of freezing them.
Any problems freezing them in the packaging they come in or is it better to individually vacuum seal each rack?

When I restarted smoking this year I originally picked up a bag of hickory chunks they had at the local Walmart. Ran through that pretty quick so I purchased a nice mixed box of hickory and cherry online.
My problem is where and how to store it.
