I've got 2.5 lbs of flank steak cut & curing in the Hi Mountain cure. I have used it a lot & love it. I have always let it cure the 24 hours suggested on packaging. I want to smoke something tonight. If I smoke it before the 24 hour period is complete, say after 7 hours, I would guess the "cure"...

Alder is the king of woods for fish in the Pacific NW.... Also, another good one is Vine Maple. Huey (Salmonclubber) will atest to that also. I've only Vine Maple a couple of times, but it is good also.
Lenny, If your outside or want to do them on the grill just slice them up and wrap them in aluminum foil with a nice sized pat of butter & about 15-20 minutes on a medium grill they will be perfect. Add S & P if you want.
Ever consider a "tankless" or "on-demand"..... Not an expert on them, but have heard positive remarks from people on pretty considerable energy cost savings. I think they are about $800 -$1,200 for the main unit.
One thing I caught myself on last night doing jerky in 95* heat. I set my MES to 165* and was not getting any smoke. I had not cleaned out the chip drawer in a while & the newly added chips were sitting on the burned/smoked chips & not getting hot enough to smoke. I cleaned it out, started over...
