That's goods to hear. My timing was off in getting them on, so I had to run. So they went 2-2-1/2, wrapped them in foil and left. Now I have to wait to try them till I get back home.
Well, it's on to my third smoke. So far I started with chicken leg quarters, did a butt last week, and now smoke #3 is some baby backs.

So I've been checking the temp, and it seems to be hanging around 180 and not going up much more. I thought I read about that somewhere. I have been refreshing the water, should I let it all evaporate at this point to see if the temp will keep rising?
