I have done a few projects with untreated cedar from Home Hardware and have a lot of end pieces and shavings that I was thinking of using in the smoker in the chip tray. However I have read different opinions on this throughout.
What are the thoughts of the fine people in this forum? Any help...
Here's my first crack at one. 7lbs. 225 deg in the smoker. 5 hrs of smoke. Inside now, wrapped and sitting in a turned off oven to re-distribute the juices...

Here's my first experience. About 5 hrs of smoke at 225 for this 7 lb pork rib roast. Its wrapped and sitting in the turned off oven at the moment for maybe an hr. I pulled it at 149 deg.
Yep... so it did stall and it turned out to be cooking/smoking for 5 hrs plus and I took it out and let it sit for 20 min approximately before cutting. It was great.. company loved it (I wanted to wrap, however no one wanted to wait, so they get what it is) and it was good. Rub had some kick...
