      "you can put a pilot flame so if it gos of it will start again." I have considered that but I am at a loss for a low cost valve set up, I would also like to get a thermocouple involved. I have searched low and high and cant seem to find one that fits the bill. Maybe a propane hot water...

    I have been able to sustain a good 220° to 230° with the length of burner I have but for sausage I'm gonna have to tone it down a bit with a shorter burner, otherwise turning the flame down so low risks a flame out... 220° is just fine for some ribs and an inaugural run (after a long high temp...

    No traffic lights were harmed during the making of this smoker... I am in a position that I come in contact with traffic engineers on a regular basis and after a year of hounding they finally broke down and offered up a slightly damaged cabinet that was set for the scrap heap...

    Hardibacker in place with a light coat of high temp spray paint to tie it all together. Nice blue flame if I say so myself:

    Burner and AMNPS in place ready for a test fire: The aluminum cabinet will need to be insulated... Hardibacker board anyone? also gonna have to rethink the small plate over the burner...larger steel plate will work.

    Yeah it is a little different. I built it that way for the sole purpose of smoking sausage, I thought it would work out better and it did, just not big enough.

    Next step was stripping the paint...this went a lot easier than the server cabinet. Just some stripper and a pressure washer. Note the little access door, perfect for a quick peek.
