    did you get the Mav ET-732 temp unit , remember not to hit bone in the butt, that will throw off the true temp on the unit, I use about 2-3 chunks every 2 1/2 hrs on a LONG smoke, on a brisket or butt that takes 16+ hrs to be done, It still looks like a Meteorite when it come out..

    EXACTLY....!!!!!..set the darn pan on top of the wood chip pan that came with it, throw on a fist size chunk of wood, drop the temp down to 225*, and just quit What is so Hard Folks...? only need a needle valve is if you want to get the temp down under 180* or lower..just burn what you brung...

    Yes way to hot, the probes are about 3' long maybe less, I even put my Transmitter & receiver in a quart ziploc so My greasy fingers and bbq smoke don't Muck them up,

    Sorry but your ??'s are unclear, If you are saying to set the Transmitter on top of the MB, the answer is yes, Mine hangs on the fence in the back. away from the heat and smoke..

    IT is real easy, why does every body over engineer the MB XL, (1) keep the wood chip pan where it is ,over the flame,(2) get a 8-10" cast iron pan at Wally World, set it on top of the wood chip pan, with a Chunk of wood,(3) leave the door Therm alone, and get the Mav ET-732, (4) feed the probes...

    price of brisket ?

    here in Cali. going rate for a full packer is , $3.59lb, so it will run me about $40 clams to get a good one, that why I got a FoodSaver..Vittles for a year or so.

    Are them just regular PB, but just deboned and then tied, Didn't see that anywhere stating such. What if my MB can't get the starting temp down that low.? My butcher is giving me some Prague #1 brine for free..

    Do yourself a favor and a lot of greif, get the 8" cast pan, and use only CHUNKS, not chips, set the pan right on top of the wood pan it came with, Pre-heat for 15m at about 325* and put the meat in with the Mav ET-732 probes in place ,put a good size chunk on, about the size of a kids fist, and...
