i am also a user of the temp probe not smoking by time just use time as a guide make sure the probe dont touch the bone or stick out to get wild readings my spares i go 155 to 160 wrap for 40 mins pull of foil then back on till 180to 190 and appling...
i line the inside of the drip pan with foil works well as for the grates dishersafe yep .. we found these mats we use and the mats are disher safe and cut down on the grate clean up they work great www.fogmats.com
what brand of smoker do you have ?had my masterbuilt do the same thing and fixed it under a hr.. the heating element black wire was loose and and rusted or over heated anyway I pulled the heating element out and found it and cut and repaired and reinstalled and good day...

I have had mine for some time now and it stopped one day i pulled the heater element out a total of 8 screws or so found the connecotr was loose and burnt i replaces both and for 2 yrs it been doind good
hey cookerlady we have a pellet 55gal drum and a traeger 075 both work great by the biggest traeger you can afford the Louisiana Smoker work good we have a traeger fire pot with L S auger and home madew other parts to get the 55 gal stainless drum working so ether or will work...
did some ribs on the egg today really windy and some rain anyway temp was 240 do the 3/1.5/1 rubbed the ribs with my own rub and sauced with honey and brown sugar
