I guess some things that would help to determine that is, what are you smoking in? How is your Apple wood processed? ( logs, blocks, medallions...) I assume you are going to just use the wood to produce your heat and not lump charcoal or anything like that?

Congrats and I would say you still get some bragging rights considering this is your first comp. I would love to find a newbie competition to enter. I think that would be one of the best ways to learn.

IMO the what is what ABT's are all about, heat. And the great thing about Jalapenos is that some are mild and some sneak up and pounce on that A%$ !
I suppose if you don't like heat you could try milder chile like a unpickled banana pepper or cherry pepper. If you don't mind them being bigger...

AK1 that is a great idea. I wish I thought of something like that prior to buying my Sheet of steel :) I am gonna do some of the fabrication here at work. The guys that work in facilitis are a great group and will help with whatever I need help with. Should be pretty fun. I'll keep yall posted.
