    Finally had a nice day to try out the new AMNPS I got for Christmas. Picked up some mozzarella, cheddar, muenster and Monterey Jack on sale for $1.99 each. I couldn't pass it up! So I loaded the AMNPS with pitmaster's choice pellets and let it go for about 4 hours. Seems a bit long after...

    Had a nice day off today so I decided to smoke chicken thighs to make some pulled chicken. So I whipped up a batch of Chef JJ`s Bubba Chicken Rub, rubbed down the chicken, smoked at 275*-300* for 1.5 hours over apple and mesquite wood. The mesquite adds nice flavor and the apple mellows it out...

    Skelly, that brisket looks great! From beginning to end my mouth was (and still is) watering. Excellent work there, sir! I also like the idea of the chipotle marinade. Definitely saving that recipe!

    Personally, I don't foil. I love a good bark and you won't get that if you foil.
