Wow, that looks so delicious. Even at lower elevations a butt that big takes a long time to cook from what I've been reading. I think I need to invest into an electric smoker like an MES for a smoke that long. lol. I don't know if I'd be able to manage my temps for that long, I guess I need more...

This is awesome info guys, I'm about to attempt my first brisket next weekend and needed this help as well. The meat is from a local farm with grass fed cattle and low on fat, I'm just hoping I don't dry it out. I'll post how it turns out.

Dang that looks tasty. I haven't tried beef yet, afraid I'd waste the meat. Been busy perfecting my ribs, and chicken. I may have to try this rather than let the wife put the roast in the crock pot next time.
