    my first smoke - brisket - help?

    LOL, thanks backwoods. I got some good advice as well about pulling at 135 then foiling. Going to see if that helps.

    Oh my gosh that's making me hungry. My wife doesn't like the texture of sausages. She wants is smooth and solid like a hotdog. I love it when it has texture, and you get the bites of the individual bits. Like Thai isan sausage. I'm going to have to smoke some and post the pics.

    First Smoke Ever

    Wow that butt looks great. I've been afraid to try one, but that's got me excited to do one. Doing my first brisket this weekend, may have to try a butt next weekend.
