Hi, and welcome to SMF.
You have an excellent smoker... I love mine and do
just about everything in it. I no longer use the wood chip
tray cause I have an AMNS & AMNPS. They both work great.

I have done whole chicks just laying them on the rack with breast up, breast down.
Standing on a beer can, on a poultry stand, and spatchcocked.
All of them have turned out great smokes..... never a problem.
But I have "Always" brined them.

First and foremost I would like to welcome you "neighbor" to SMF.
I always smoke ribs meat up. When I foil I put meat down.
Haven't had a fail rib smoke as of yet.
Make sure you take some snapshots and post them when you are finished.
We all like pics.
