    Reuben Fatty

Had some pastrami left over from some that I had made last week, and was hungry for a fatty, so decided to try a reuben fatty.  Rolled out a pound of 80-20 ground beef, spread thousand island dressing on that, piled sauerkraut on top of that, sliced up some pastrami and put that on next.  Then...

    Neighbors ever complain about smoke???

I've gotten a lot of good advice from this forum, but Squibb, your last three paragraphs is some of the best advice you could give anyone...applies to many situations, not just smokin'!

    First fatty!

Great looking first fatty.  The fun part of fatties is that you CAN stuff them with anything!  I made one out of ground chicken, stuffed with pizza sauce, mushrooms, onions, pepperoni and mozzarella cheese!  Turned out great.  Keep smokin' them fatties!

    AMNPS Oopsie

You are right Dave...it did take a bit of experimenting to get the tent to block the drips, but still keep good air flow.

    Tips for MES Owners

Tried something different cleaning the racks on my MES30 last night.  I'd smoked up a pastrami as well as some chicken thighs, and the racks were a mess.  I had also used my weber gas burner grill, and wanted to clean the grates on that as well.  I put the dirty greasy racks from the MES into...

    AMNPS Oopsie

It does look like it was lit in the middle row as well as the first row...also, having it that close to the heating element didn't help any.  Do you think some fat may have melted off the butt you were smoking, dripped on the AMNPS and caught fire?  I had that happen once...lots of white smoke...

    Neighbors ever complain about smoke???

Maintenance guys at my apartment complex smelled my smoke today and stopped by just to see what was cooking.  I've got a corned beef point turning into pastrami....they said they would be back later this evening, just to see if I needed anything fixed, of ya, for a sample of pastrami too!

    Neighbors ever complain about smoke???

I live in a ground floor apartment, and my neighbors all say they love the smell of my smoke...of course having shared some smoked goodies with most of them hasn't hurt either.  My upstairs neighbor says my smoke doesn't bother them, if his brewing beer on his balcony doesn't bother me. Then...

    Best ingrediant to add heat

If you like cheese in your snack stix, I use high temp pepper jack cheese in mine.  If I want hotter, add a bit of cayenne.
